As per traditional methods, milk of only domestic* breed of cows, native to Indian subcontinent,  is milked in brahma muhurat (pre-dawn time).  These cows can be identified by the large hump on their back.

 

Then it is slow boiled in small batches and cooled down to the right temperature and made into curd. When the curd is formed well, it is churned to extract raw white butter, makkhan.

 

This butter is then cooked on fires with care to yield ghee which is separated and filled in jars for your consumption.

That is why it has great taste, color, aroma and texture.
